What are the three common acids found in wine?
Tartaric, malic and lactic.
Where in the palate is acidity generally felt?
On the sides of the tongue. The higher the acidity the more the mouth will water as the saliva attempts to reset the natural level of water. It will cause sharp tartness, tingling etc.
How will a low acidity wine taste?
Soft, broad and round. The wine is not leading with its acidity.
How will a high acidity wine taste?
Will normally be found in wines made from cool climates grapes and tend to be mouth watering.
Which aromas and fruit are associated with high acidity?
Citrus fruit - lemon, lime, grapefruit, orange peel, lemon peel;
Green fruit - apple, pear, gooseberry,quince, grape.
What taste can mask acidity in wine?
Sweetness e.g. in sweet wines. Acidity is there to provide balance and is less obvious. (Our brain is focussed on sugar)
Which taste component can cause similar sensation as acidity?
Alcohol if high level.
What are the sweetness levels for SAT?
Dry, off dry, medium dry, medium sweet, Sweet, luscious.
How will a dry, off dry and medium dry wine generally finish?
With a “dryness”.
How will a medium sweet, sweet and luscious wine generally start and finish?
They will start and finish with “sweetness”.
