Storage & Service Flashcards
What two things can cause damage if sake is not properly stored?
Exposure to heat and strong light.
Refrigeration is especially important for what two types of sake and why?
- Nama-zake, because it is unpasteurized.
- Ginjo sakes, to protect the fruity aroma.
Drink Sake when after purchase?
Most sakes are intended to be consumed within about a year of being put on sale as they will lose their freshness.
Most nama-zake lose their freshness in a few months and should be consumed as close to purchase as possible.
What are the effects of strong sunshine and bright artificial light?
Both can cause faulty aromas to develop.
How long does sake last after opening?
Stored in the refrigerator, about two weeks.
More delicate ginjo styles for about one week.
Name three traditional service and drinking vessels.
- Masu (wooden box)
- Tokkuri (carafe)
- O-choko (sake cup)
Service for chilled sake:
- Sakes should be chilled in a fridge.
- They can either be served straight from a bottle that has been refrigerated or decanted into a tokkuri. Some tokkuri have a compartment for iced water to keep the sake cool.
What are two methods for warming sake?
- Water bath
- Microwave
Describe how to warm sake using a waterbath.
Place the tokkuri in a container filled with water heated to about 80°C (176°F). It takes about two to four minutes to warm a small tokkuri of sake, and you should always check the temperature using a thermometer.
Practicing heating water in a microwave is a good way to perfect your timing for sake.
