How to store wines for a long time?

A
  1. Avoid any heat variation
  2. Store wines with cork on the side (so that the cork does not dry out and let air inside, which will oxidise the wines)
  3. Keep away from strong light (heats the wine which will become stale and old prematurely)
  4. Keep away from vibrations (so that it lays still)

What are the steps in opening a still wine?

A
  1. Remove the top of the capsule by cutting around or below the lip of the bottle
  2. Wipe the neck of the bottle with a clean cloth
  3. Draw the cloth gently and neatly with a corkscrew
  4. Clean the neck of the bottle inside out
  5. Check the wine’s condition by pouring a sample

What are the steps in opening a sparkling wine?

A
  1. Remove foil and loosen the wire cage (hold the cork securely)
  2. Tilt the bottle to a 30° angle gripping the cork
  3. Use the other hand to grip the bottom of the bottle
  4. Turn the bottle, not the cork
  5. Hold the cork steady and ease it slowly out
  6. Gas pressure should be released quietly, not with an explosion

How do we decant wines with deposit?

A
  1. Remove the bottle horizontaly from the rack and make sure the deposit is not agitated
  2. Gently remove the top of the capsule, clean the shoulder and neck of the bottle, gently remove the cork
  3. Hold the bottle in front of a light and pour the wine slowly into a decanter until the deposit is seen near the neck
  4. Stop pouring

What are 2 systems used to preserve opened wine for longer?

A
  1. Vaccum system = sucks out the oxygen from the bottle

2. Blanket system = blankets the wine with a gas heavier than oxygen to protect it from air
