Differences between Starch and Cellulose
A
-> Starch coiled branches(amylose) where as cellulose has more branches (than amylopectin) but its branches are shorter.
-> Starch is made from Alpha glucose where as Cellulose has Beta glucose.

What is cellulose made of?
A
- Many chains of beta glucose
- Straight unbranched chains - Flipped
- Between bonds there is hydrogen bonds

A
- Branched chains
-> easily hydrolised as enzymes can reach it faster

- Coiled structure
-> Compact, easily fit into small spaces

Properties of Starch
A
- Large and insoluble - doesn’t dissolve in water - Small surface area - less space taken up
- Branched chains(Amylopectin) - Exposed branches are easily hydrolised as enzymes can reach them faster
- Coiled Chains ( Amylose) - Compact - fit into small space
