Honey-Chili Glazed Pork Belly
It’s a dish inspired by one of Walt Disney’s favorite foods, spam and eggs with biscuit and honey, and gravy. We have used Tiffins inspirations in cuisine and created our own version, so instead of spam, we use pork belly glazed with a honey-chili sauce, a chorizo midnight moon biscuit and a homemade Tasso gravy that’s finished off with pickled green papaya and a pan fried quail egg.
Butter Chicken
It’s an Indian inspired dish that features a Bell and Evan’s airline chicken breast that’s been brined for 4 hours, yogurt marinated, then it’s pan seared and served with a rich butter sauce, that’s a mild tomato based curry sauce, a chickpea-rice croquette, some pickled pearl onions, English peas and purple cauliflower.
Braised Lamb Shank
It’s a 16oz bone-in lamb shank with a Baharat spice rub and then braised in a red wine sauce for several hours. It’s served with couscous with a coriander butter blended in, a Moroccan vegetable stew called Kottu that’s made with eggplant, zucchini and a few other vegetables and spices, and it’s finished with baby carrots, onions and tomatoes.
Surf and Turf
It comes with a 7oz Prime Beef tenderloin and 3 U10 wild caught scallops. The scallops are seared with Dhania butter, which is also known as coriander butter, and the beef seasoning Braai is inspired by a South African barbecue. It also comes with a potato pave, English peas with truffle oil, corn purée, grilled vegetables and cola demi-glace.
Tamarind Braised Short Rib
It’s slow roasted for hours and then braised in a tamarind demi-glace. Tamarind is leguminous berry from Africa. It’s served with a parsnip-potato purée, a parsnip sphere and a parsnip crisp. It’s then completed with a sweet-tart Medjool date vinaigrette.
Braai Spiced Veal
9oz Braai spiced veal which is inspired by a South African barbecue, served with a creamy mushroom ragout with 6 different types of mushrooms, black garlic purée, truffle pap, which is like a truffle polenta, a cipollini onion, some other grilled vegetables (baby carrots, a turnip, Alba and hen of the woods mushrooms, brussel leaves and red ribbon sorrel) and a veal demi-glace.
Chocolate Gateaux
It’s a cinnamon chocolate gateaux, which is French for cake, that’s been inspired by a Mexican hot chocolate. The cake is layered with chocolate chiffon, almond praline and chocolate ganache and it’s also served with chocolate cookie pearls that are sprinkled with cayenne pepper and a chocolate-Amarula sauce.
North African Spiced Tofu
It’s a 7oz pan seared Chermoula Marinated Tofu that’s topped with Chakalaka, which is a tomato based stew, and it’s finished off with a corn emulsion and spring vegetables.
