It is fermented partially (20%) in neutral oak barrels, and the rest (80%) in stainless steel, before resting in all steel to combine the wines. This will be a classic expression of lean, high-toned Chablis with just a little “extra oomph” from the Old Vine fruit density/concentration, and the subtle hint of oak influence.
Same soil types as Champagne, chalky, mineral, marine driven deposits/shellfish. Which provide the higher acidic structure yet salinity driven wine
