POTATO &; CHAMPAGNE SOUP
A variation of Vichyssoise (vishy-Schwa)
Potato and leek
Base -garlic, onion, YUKON GOLD potatos
Cooked in veggie stock and white wine with a small amount of milk to give it richness and creaminess without being heavy
Finished with prosecco (not cooked off) and butter
Garnished with
Chives, diced potatos, potato chips, preserved black truffles, and truffle oil
Add ON: poached lobster claw meat

Round wedge of iceberg lettuce
With house buttermilk dressing
Smoked paprika croutons
Bleu cheese crumbles
Garnished with Herb and oil cherry tomatoes Cracked black pepper Chives Chervil and olive oils
SIMPLE GREENS
Hand selected lettuce with thinly sliced market vegetables (carrots, radishes , asparagus soaked in ice water)
Fresh soft herbs - parsley, chives, tarragon, oregano
Dressed in sherry vinegar dressing
Sea salt
Cracked pepper
NEW SCHOOL CESAR
Romain heart leaves tossed in a smoky Caesar dressing with fresh lemon garnished with warm Parmesan cheese crouton ( warm sourdough bread with Parmesan parsley olive oil and chili flakes like cheese bread)
Finished with shaved Parmesan
