PORCINI RUBBED PORK CHOP
Grilled , Recommended Medium temp
Thick cut Burkeshire pork chop
rubbed in a porcchini mushroom Rub (dried Porcchini, coffee, salt, sugar, and cayenne)
served with chanterelle stroganoff sauce ( chanterelle mushrooms, veal stock, sour cream, whole grain mustard )
garnished with chives
it’s inspired by beef stroganoff
TUNA AU POIVRE
Recommended temp- medium rare
Peppercorn and coriander crusted bigeye tuna
seared to medium rare
serve with anchovy garlic butter (anchovies roasted garlic parsley lemon zest chili flake)
