Snap Peas
Snap peas are grilled over charcoal, then tossed with olive oil, sea salt and lemon juice. The peas are plated and finished with fresh grated horseradish, torn mint, and basil.

Grilled Haloumi, Tomato Jam
Two slices of charcoal grilled Haloumi (brined Goat and Sheep’s milk) are topped with a cherry tomato jam. The jam consists of cherry tomato, shallot, fish sauce, sugar and oregano.

Spanakopita
Our spanakopita consists of spinach dip and Kasseri cheese. The spinach dip consists of baby spinach, garlic, parsley, oregano, feta and creme fraîche. A flour tortilla is spread with spinach, then grated Kasseri cheese. It is then grilled on the flattop and cut into triangles. Served with tzatziki and green chili sauce.

Zucchini Fries
Zucchini strips tossed in a tapioca and rice flour batter with kuzu starch. It is then fried till crisp and seasoned with black pepper, white pepper, salt, mushroom powder, sumac, and mint. Served with a side of Australian feta that been whipped with whole milk.

Lamb Dolmades
Lamb sausage (ground lamb, rice, whole egg, mint, parsley, garlic, harissa, fish sauce, coriander, black pepper, fenugreek, dates) is wrapped in grape leaf and grilled. It is served with a pomegranate bbq sauce and labneh (strained yoghurt).
