Chicken Souva
Jidori Chicken breast is marinated in lemon, garlic, oregano & spices. It is then grilled and served with a herb labneh (tzatziki) Greek slaw, which is made with shaved red cabbage, carrot, parsley, olive oil & lemon. It is served with a pita that is sliced in half. 2 skewers per dish (10oz) of chicken.

Grilled NY Steak
Aspen Ridge NY strip steak marinated in a miso pineapple paste overnight. It is then grilled to the guests desired temp. The steak is pre-sliced and served with house steak salt.
Salt Baked Branzino
A whole branzino (2lbs mediterranian sea bass) encased in slat and baked. It is brought to the table and revealed to the guest. Served with lemon dressing.
Lamb Shoulder
A half shoulder. The shoulder is grilled then slow roasted with lemon leaves, garlic and rosemary for 8 hours. Served with mint tzatziki and a spicy zoug. parsley, cilantro, basil, garlic, shallot, espellette, pickled fresno chilli, mushroom dashi, butter and lemon juice.

Grilled Snapper
A whole snapper (white fleshed fish less flakey and more sweet and nutty than bass) is deboned and butterflied. It is brushed with salsa verde and grilled over charcoal with potato leaves. Served with grilled lemon.
