Organic Smashed Potatoes
Fingerling potato, russett potato, garlic, thyme sprigs, salt, heavy cream, butter, pepper
Roasted Seasonal Vegetable
Cauliflower, mushroom, broccoli, baby carrots, squash, Brussels sprouts, all roasted in the brick oven with olive oil, salt and pepper
Sautéed Dark Greens
Kale, collard greens, bloomsdale spinach, sautéed in EVOO with chili flake, garlic, and salt
Sweet Corn & Quinoa
Red quinoa and shaved yellow corn, cooked with EVOO, cane sugar, salt, pepper, heavy cream, parmesan, and Greek yogurt. Topped with parmesan. (Like a creamed corn with greek yogurt)
GF Mac & Cheese
Gluten free fusilli pasta (made from corn and rice), cheese sauce, Parmesan
Cheese Sauce: heavy cream, salt, sugar, pepper, provolone, Prairie Breeze, parmesan, xanthan gum.
Organic Brown Rice
Organic brown rice, water, ginger, salt.
Red Chili Glazed Sweet Potato
Oven roasted sweet potatoes and bok choy glazed with sesame vinaigrette, and topped with sesame seeds.
Sesame Vinaigrette: rice wine vinegar, sriracha, tamari, cane sugar, xanthan gum, salt, sesame oil, grape seed oil
Quinoa Tabbouleh
Red quinoa, parsley leaves, green onions, mint leaves, cucumbers, lemon zest, tossed in EVOO with lemon juice, salt and chili flake.
Grilled Asparagus & Wild Mushroom
Grilled asparagus, roasted mushroom, EVOO.
Snap Pea Soba Noodles
Buckwheat soba noodles, snap peas, Asian herbs, and toasted sesame seeds tossed in a sesame vinaigrette.
(make sure the guest knows that this dish is served cold!)
Sesame Vinaigrette: rice wine vinegar, sriracha, tamari, cane sugar, xanthan gum, salt, sesame oil, grape seed oil .
Beet, Avocado, & Citrus
Roasted Golden and Candy stripe beets, clementine segments, diced avocado and arugula tossed in a chia seed vinaigrette.
Chia Seed Vinaigrette: apple cider vinegar, agave nectar, cane sugar, salt, pepper, xanthan gum, grape seed oil, chia seed.
Fresh Seasonal Fruit
Currently: Pineapple, strawberries, bananas, and apple, however this will change seasonally. It will be your responsibility to know the current fruits when the guest asks!
Kale & Apple Slaw
Kale, green cabbage, Fuji apples, coleslaw dressing.
Coleslaw dressing: Greek yogurt, mayonnaise, apple cider vinegar, cane sugar, salt, pepper.
French Green Lentils
French Green Lentils, water, EVOO, salt, Tuscan seasoning. (Lentils are a legume high in protein and fiber!)
Dressing-Sauce: Tuscan Seasoning - yellow onion, celery, carrots, shitake mushrooms, garlic, thyme, celery seed.
Broccoli and Parmesan
Steamed broccoli with a sprinkle of parmesan.
