Dry base white wine is fermented. Fortified with alcohol to 15%ABV Barreled and aged in Solera system under Flor. Fortified again to 17%ABV (Flor dies) Aged in Solera system
What is Flor? At what %ABV does flor cease?
Flor is a covering of yeast on the surface of the sherry which prevents oxidation.

Ageing under flor is known as what type of ageing?
Biological ageing
Ageing without Flor is known as?
Oxidative ageing
What is the difference in process between Fino and Amontillado production?
Fino is fully biological aged under flor.
Amontillado has biological for a period then is fortified and oxidative aged until ready for bottling.
What is profile of Fino sherry?
Pale lemon appearance
Primary aroma/flavour of apple and almonds
Flor flavour of biscuit and bread dough.
Serve chilled and drink young

Deeper colour
Flor flavour of biscuit and bread dough.
Oxidation flavour of walnuts and caramel
How is Oloroso sherry made?
Base wine fermented
Fortified to 17% ABV (Yeast dies so no flor)
Aged in Solera system ( Oxidative ageing)
What is profile of Oloroso sherry?
Browner colour.
Dried fruits from ageing( raisins, prunes)
Walnuts and caramel from oxidation
