What is the plastic range?
temp range at which a fat can be easily deformed.
Why is fat plastic?
because it is a liquid in solid (crystalline) mixture. The cystaline structure is holded by van der wall bonds that are easily broken and can reformed also easily.
What is polymorphism?
the capability of TG to crystallize in a variety of different crystals and to change from one form to the other.
