2
Q

Why is fat plastic?

A

because it is a liquid in solid (crystalline) mixture. The cystaline structure is holded by van der wall bonds that are easily broken and can reformed also easily.

Q

What is NMR ?

A

tehcnique to measure the SFC by probing using radio waves and magnetic field. Higher is the NMR signal and the more there is liquid in the fat
