What is difference testing?

A

What is the triangle test?

A

The subject presented with three samples, two are samples, one is different. Subjects asked to identify which sample is the difference.
- lower chance of getting right.

What is the Duo-trio test?

A

The subject presented with two samples and one control (reference)
- The subject asked to identify which one of the two samples is the same as the control

What is Descriptive analysis?

A

The complete sensory description of visual, aroma, taste. Provide word descriptions for products, basis for comparing similarities and differences. Allows for the relation of a specific process or ingredient to few or many sensory attributes.

What is the preference tasting?

A

Aims to measure the liking or acceptance of a product and then indirectly determines the preference for it.

  • 9 points hedonic scale: made up of 9 points and 9 statements, avoid of neutral category. Extremely Dislike liking extremely.
  • Paired-preference test: subjects taste two products, identifies which is better, forced to make a choice.

What is sensory evaluation process?

A

Several steps are necessary in order to ensure a robust, scientific sensory evaluation is carried out.

  • Determining the project/ test objectives
  • Screening the samples
  • Designing an appropriate test
  • Conducting the test
  • Analysing the data
  • Interpret/ report the result

What type of scales?

A

Nominal Scale
- tick boxes don’t give information like intensity etc.
Ordinal Scale
- Number or word used to organise the response, some might be similar but forced to pick a site.
Line Scale (intervals)
- the zero points are arbitrary
- 150mm length, word anchor at the end
- 1.5cm in from each end to avoid ‘end order effects’.
Ratio Scale
- the constant ratio between point and absolute zero.
