Dried for a few months then referred to as Italian bacon
Made in house by curing pork belly in salt, sugar, rosemary, and garlic

Salt cured leg of pork (ham)
Only called this if actually made in Parma Italy
Served with thin sliced melon

Hind leg of of the pig
Boned before curing in spices (nutmeg bay leaves)
Then smoked
Soppressata
A dry cured uncooked salumi made with beef and pork
Finnocchiona
A salumi that has pork fennel sea salt red wine and garlic
Mortadella
A large Italian sausage
Finely ground- heat cured pork
Contains pistachio
Guanciale
Similar to pancetta ( unsmoked pork belly, dried, Italian bacon)
But made from the jowl of the pig
Richer in flavor than the belly
Coppa
Muscle behind the pigs head
Cured with red wine salt and spices
