A fruit-filled start of melons, grapes, cherries, and dried apricots meets a subtle acidity play that creates a multi-layered sake that should be sweet, but really is quite dry.
Why is the sake brewery called “Masumi”?
They began using the name “Masumi” for our sake at the end of the Edo period (1603-1867). Masumi, which means transparency or truth, is the name of a 8th century bronze mirror kept at the Suwa Taisha shinto shrine. My family had provided the shrine with sake for centuries, so it was only fitting that our sake took the name of the shrine’s “Masumi Mirror.”
Flavor profile for Tenzan Junmai Genshu
With a soft fruity nose of bananas and melons, this sake has an off-gold appearance. From the first big introduction to the final goodbye this genshu is deep and expansive. Flavors from bananas, melons, and crushed leaves run throughout the mouth in a dry and solid transition. The viscosity and full-bodied flavor would appeal to any red wine drinker with a taste for flavor forward sakes that “talk-the-talk”.

Story behind Chokaisan brewery
Founded in 1874, Tenju Shuzo is a tightly knit, family-owned brewery enjoying its sixth generation of sake production. To ensure the quality of their product, the brew masters at Tenju use only naturally filtered, soft water from nearby Mt. Chokai and rice grown by exclusively commissioned local farmers.
