Tasting Notes
The 2014 Viognier explodes from the glass with peach, apricot, and jasmine with hints of orange peel and meyer lemoon. The palate presents a rich and luxurious attack with elements of honey, waxed fruit and melon. The wine finishes with ripe citrus and crushed rock notes.

- Filling the wine press with destemmed grapes
- Slow cycle at a week intensity pneumatic wine press
- Transfer of juice into a cement tank with a regulated temperature to settle
- Filtration of sediment and reintegration
- Fermentation temperature regulated to 17°
- 12.5% alcohol

- Wine rests for between 14 to 18 months
- Neither clarified nor filtered wine
- Bottling takes place on the Estate

- Store in a cold and dry place with a consistent level of humidity
- Bottles kept in a horizontal position to keep the cork moist

VINIFICATION:
- selection of parcels of old vines with naturally small yields
- manual harvest with sorting and refrigeration of the grapes
- direct press to preserve the acidity
- partial fermentation in barrels (50% of the volume)
- aging on lees during 6 months
- one single bottling run without filtration.
TASTING NOTES:
- Appearance: the pale yellow color tinted in green announces a wine with a great deal of freshness and purity
- Nose: the complex nose reveals floral and mineral notes with accents of fresh citrus fruits
- Taste: lively and fresh, the aromas of flowers and white fruits, blends with flint. The very soft finish evinces a great deal of minerality.
AGING POTENTIAL: Enjoy now or cellar 3 years.
FOOD & WINE PAIRING: Serve between 50° and 55°F (10° – 12°C).
