NV Pierre Peters Cuvee de Reserve
Blanc de Blanc
The wine is clear or pale with hints of green typical to the Chardonnay. The mousse is fine and regular with a pretty ribbon of strong bubbles. The first nose is both flowery and fruity, then comes notes of fresh nuts and fresh bread. In the finish there is citrus which brings a beautiful impression of smoothness and freshness. The attack is frank, associated with delicacy and roundness. The first impression is dominated with fresh white fruits (lemon and pear) and with flowers (acacia), followed by creamy notes. The finally is persistent on the citrus (candied grapefruit, tangerine and lemon) and minerality, bringing freshness and elegance to the wine.
1998 Gimonnet–Oger Blanc de Blanc
This Champagne has been resting peacefully in Jean-Luc’s cellars for the last 15 years, and we are thrilled to offer it to you directly from those cellars. And for this amount of age, it is extremely youthful. 1996 is an exceptional vintage and it is a rare find these days. The mousse is immaculately white. Hints of candied nuts, toast, and pear lead to a finish of beautiful acidity and minerality that lasts for minutes. This clearly has a future ahead of it, as it will continue to develop for years to come. It is a very limited selection that will surely thrill Champagne enthusiasts.
NV Alain Bailly Brut Reserve
Powerful nose upon pop of the cork. Brioche, pineapple & pear. On the palate, medium bodied w/some sweet biscuit flavors dominating. Could use a bit more brightness/freshness, but is an overall well made bottle of Champagne.
NV Didier-Ducos Absolu Meunier Pinot Meunier
Pinot Meunier…December 11, 2014 - Popped and poured. Lots and lots of bubbles, must be mindful when pouring the first glass. Very unique champagne for the first 90 minutes then transformed into something a bit more pedestrian. Paired it with a cheese and meat plate. Was an excellent counterpoint to the sharp, salty blue cheese as well as being able to cut through the fat in the salami. The nose had kiwi, pear and red apple. Very little mineral on the palate. Would purchase again.
NV Patrick Bottex Bugey Cerdon La Cueille Sparkling Rose, Savoie, France
Gamay – Poulsard, the red grapes of Beaujolais and Jura respectively, are used together in the quirky, sparkling pink wines of Bugey Cerdon. These semi-sweet wines are made using the méthode ancestrale form of production, whereby no secondary yeasts are added. This means that the wine retains much of its grapey flavor.
Wines made from Gamay and Poulsard generally have good acidity and are lightly perfumed. Given Poulsard’s somewhat neutral nature, in terms of color, what little pigment the wines do have comes from Gamay. In terms of flavor, Gamay’s red and candied fruits are most commonly noted.
This grapefruit-pink sparkling wine is made from 90% Gamay and 10% Poulsard in the area between the Savoie, the Jura, Burgundy, and the Rhône in France. Different from the méthode champenoise, the méthode ancestrale technique bottles the wine before primary fermentation is complete and the wine goes through a secondary fermentation in the bottle. Unlike in Champagne, dosage is not permitted. Bright fruit (mostly ripe strawberries) dominates the nose and the palate. Quite sweet, this wine is perfect as an apertif or for a picnic on a hot summer day. More acidity could make this a more complete wine, but nonetheless it is fun and refreshing. 8% abv Purchased $14. The persistent bubbles and the franc rose slightly orange invite you to wine tasting . Where the nose gently opens to notes of red fruits , fine and racy palate is a nice balance between vivacity and silky structure .
NV Cave de Bissey Brut
Cremant de Bourgogne is the appellation for the white and rose sparkling wines of Burgundy, made predominantly from Pinot Noir and Chardonnay grapes in the methode traditionelle. Created in October 1975 to complement Bourgogne Mousseux (the title for sparkling red wines), the appellation is now applied to more than 13 million bottles of wine every vintage.
Close to Givry and Buxy, Bissey is on the cool side of the Côte Chalonnaise, giving its sparkling wines that extra freshness. This Brut is bright, crisp, laced with apples and tangy lemon zest. It’s a light and lively wine to drink as an apéritif.

Chardonnay: Franciacorta is a small wine-producing area in Lombardy, northern Italy. It is famous for its high-quality sparkling wines, which are made very much in the image of Champagne. The Franciacorta wine region is located in the Brescia province, in the hills immediately south-east of the foot of Lake Iseo. Roughly square in shape, it stretches eastwards for 15 miles (25km) from the Oglio River (which flows out from the lake) until reaching the Mella River valley and the western suburbs of Brescia city.

This was served as a starter. After coming in from 90F temps, this was not as refreshing as I hoped. So, after some water and with a bit of food, this was much better. It is not a profound sparkling wine but certainly competes with the best Prosecco’s or Cava’s. Yellow in color with a nice mousse. The nose has green apples with a bit of toast. Nice acidity. Very food friendly. A nice starter. (88 pts.)
