What should be done with red meat inspection?
- Visual

What are meat inspection aims?
- For assessment of pathology
- Presence of SRM
- Contamination of SRM / faeces
- Gross pathology
- Evidence for residues or contaminants
What should be inspected?
- Incision of lymph nodes, heart, masseters, bile ducts, kidneys
- Palpation of lungs, spleen, liver
How can trichinella spirialis be inactivated?
- Freezing
- Cooking
What is seen in cases of toxaemia grossly?
- Uraemia with severe pyelonephritis
- Ketosis with fatty changes in the liver
What should be done with risk of toxaemia?
- Hold carcase for 24hrs + check by boiling / frying test
- Unfit for human consumption if smell still present
What can cause viraemia? What will be seen?
- Bovine pestivirus (BVD / mucosal disease)
- ulcerated oesophagus, base of tongue + soft palate
- If seen = unfit for human consumption
What is the commonest malignancy of cattle?
- Sporadic bovine lymphosarcoma

What are the different types of erysipelothrix rhusiopathiae infections?
- Mild type = diamonds visible on skin, possible bacteraemia
- judgement = depending on lesions

- judgement = total rejection
- Chronic = arthritis, endocarditis, enlarged lymph nodes =
- judgement = local / total rejection depending on severity + extension of lesions
What are Ddx for jaundice?
- Deficient exsanguination = septicaemia = unfit for human consumption
- Jaundice = unfit for human consumption
What should be done with vertebral porphyria / haemochromatosis?
Partial rejection
What is a Ddx for white muslce disease?
- Anaemia = unfit for human consumption
- White muscle disease - unfit for human consumption
What should be done with hydrocachexia?
- Emaciation with serous atrophy of adipose tissue = unfit for human consumption
What should be done with callus formation following fracture?
- Partial rejection if no evidence of septicaemia
