NOODLES
We use all whole wheat noodles, which contain gluten
Wavy noodles are used for the tsukemen, tantanmens, and truffle miso. They have no egg in them and are vegan
Thin noodles are used for yuzu shio, torigara shoyu, yuzu ratan and kids ramen. They
contain egg
We offer gluten free + vegan noodles, which are made with tofu!
Negi oil is put on all tsukemen and to-go order noodles to help keep them separate (Allium

Jidori Eggs
The Japanese-bred free-range chickens are known as Hinai-Jidori (a cross of Hinai-dori and Rhode Island Red chickens). In Japan, they must have at least 50 percent Jidori ancestry to be authentic, but the telltale sign are the dark orange yolks—the result of a vegetarian diet
