What are food recalls?
Food recalls happen when the food has been deemed inappropriate for sale. This could include microbial contamination, labelling issues, foreign objects.
What are the two levels of recall?
Trade and consumer.
Trade is removed from all points distribution - but has not been affected on a consumer level.
Consumer recall is the most expensive and deems all products unfit and need for return.
what is food withdrawal?
It is a food recall but the issue has no effect on consumer health.
What are good food management tools?
Hazard Analysis Critical Control Point (HACCP)
Good Hygiene Practice (GHP)
Good manufacturing Practice (GMP)
Microbial Risk assessment ( MRA)
Quality Management (QM) and Total Quality Management (TQM)
What is HACCP?
HACCP allows for more predictive data on your entire production line. By analysing the risks and procedures at each step you can have a pro-active risk assessment on your product. It identifies specific hazards and risks at certain stages and allows you to reduce and eliminate these issues.
What are the seven stages of HACCP
1) Conduct Hazard analysis
2) Determine critical control points (CCP)
3) establish critical limits
4) establish system to monitor the control of the CCP
5) Establish corrective actions
6) establish verification processes
7) Document and Record
What is a critical control point?
a CCP is a stage in a production that reduces or eliminates risks and hazards associated with that stage.
how do we define a CCP point
we use a Critical control point tree, to ensure that we are using the best control.
What is a standard?
a standard is set by a government or independent organisation which must be adhered too, this ensures that the product or service is fit for their purpose.
