Puede la cocina cambiar el mundo?
Can cooking change the world?
Vivimos tiempos difíciles
porque, por un lado, gracias a la conectividad,
podemos ver el rostro más hermoso del ser humano
y, por el otro también, el más horrible:
el hambre, la violencia, la guerra, el odio, la intolerancia;
todo un espectáculo diario
que, al llegar a casa, nos deja con la sensación al final del día
de que todo está medio perdido.
We’re living in difficult times
because, on one hand, thanks to connectivity,
we can see the most beautiful sides of humanity
but, on the other hand, also the ugliest:
hunger, violence, war, hatred, intolerance;
daily scenes
that, when we come home at the end of the day,
we feel that everything is kind of lost.
Pero no, no lo está,
porque es precisamente en la casa en donde podemos encontrar
quizás una de las herramientas más infalibles
para tratar de luchar en favor del bienestar nutricional,
emocional y ambiental de nuestro planeta.
¿Dónde en la casa?
Pues en la cocina.
Voy a contarles por qué con tres historias.
But it’s not,
because it’s precisely at home where we might find
one of the most infallible tools
to fight for the nutritional,
emotional and environmental well-being of our planet.
Where at home?
Well, in the kitchen.
I’ll tell you why with three stories.
La primera:
Yo soy limeño,
hijo de toda la sangre, se nota,
de madre, hija de la costa, aristocrática y virreinal
y de padre hijo de los Andes, de los Incas, del Cuzco.
Y en mi casa,
los Andes y la costa históricamente enfrentados,
se unieron gracias al amor,
como ocurrió en la mayoría de limeños, hijos del más diverso origen:
de africanos con amazónicos,
de japoneses con andinos,
de chinos con italianos.
The first one:
I’m from Lima,
a product of mixed bloods, as you can see:
my mother, a daughter of the coastal area, aristocratic and viceregal,
and my father, a son of the Andes, the Incas, from Cuzco.
So in my home,
the Andes and the coastal area, which are historically confrontational,
ended up together because of love,
as happened to most people from Lima, descendants of diverse backgrounds:
Africans with people from the Amazons,
Japanese with Andeans,
Chinese with Italians.
Esta historia de amor, por ejemplo:
la hija de un próspero bodeguero chino cantonés
se enamora jugando en las calles del puerto del Callao en Lima
del hijo del famoso pastelero genovés, de Italia.
Al comienzo los padres se oponen rotundamente a este amor,
y ellos deciden huir para fundar su hogar.
Y es ahí donde descubren sus grandes diferencias.
¿Dónde? En la mesa.
Ella descubre que amaba profundamente el arroz frito en el wok
que le hacía su padre.
Y él, él amaba el risotto que su abuela le hacía a fuego lento.
Ella quería echarle salsa de soja a todo.
Like this love story, for example:
the daughter of a prosperous Cantonese store owner
fell in love playing on the streets of the port of Callao in Lima
with the son of a famous Genovese pastry chef from Italy.
In the beginning, their parents were totally against their love,
so they decided to run away to create their home.
It’s there that they discover their biggest differences.
Where? On the table.
She discovers that she really loved
the fried rice that her father used to make for her in the wok.
And he loved his grandmother’s slow-cooked risotto.
She wanted to add soy sauce to everything.

Y él quería echarle queso parmesano a todo.
Al final, se ponen de acuerdo:
hacen el arroz en el wok

Y dan vida a un nuevo plato:

recibió a millones de personas
que soñaron con hacer realidad
su vida en nuestro país.
Sin embargo, no los recibió en guetos,
no los separó,
sino que los integró, los unió
y, al menos en la cocina,
supo construir puentes fecundos de amor y de paz.
El mensaje desde el Perú es claro:
nada malo nos ocurre, solamente pasan cosas buenas
cuando abrazamos nuestra diversidad.

In the end, they come to an agreement:
They cook their rice in the wok,
but they slow cook it.
They add a little bit of Parmesan cheese
and a little bit of soy sauce.
And a new dish is born:
the Peruvian rice with seafood,
which has a little bit from one, and a little bit from the other –
like all the dishes in our cuisine
with that magical seal of a Peru
that, for many centuries, received millions of people
who had the dream of building their lives in our country.
They were not received in ghettos
or separated,
but integrated, joined together,
and, at least in the kitchen,
learned to build bountiful bridges of love and peace.
The message from Peru is clear:
nothing bad can happen to us;
only good things will occur when we embrace our diversity.
La segunda historia trata de mí, que soy cocinero.
The second story is about me, who am a cook.
Empecé mi formación en París como estudiante,
I began my training in Paris as a student,
donde además tuve la suerte de conocer a mi esposa, Astrid,
