Protein Flashcards
What are HBV proteins
Proteins containing all of the essential amino acids e.g. Meat, dairy, poultry, soya
What are LBV proteins
Proteins that do not contain all essential amino acids e.g. Lentils, quorn, chickpeas, nuts
What is protein used for
Growth and repair and second source of energy
What are IAAs
Indispensable amino acids that are essential for growth
What elements do proteins contain?
- carbon
- hydrogen
- oxygen
- nitrogen
Sometimes:
•phosphorus
•sulphur
Why are animal proteins more expensive than plant
Plants need:
- rain
- fertiliser
- can fit more in land
Animals need:
- vaccine
- shelter
- warmth
- food
- slaughtering
What protein does meat fish (connective tissue) contain?
Collagen
What protein does meat fish (muscle tissue) contain?
Myosin
What protein does meat (muscle fibre) contain?
Elastin
What protein does milk and cheese contain?
Caesinogen
What protein does milk contain?
Lactalbumin
What protein does egg white contain?
Ovalbumin
What protein does egg yolk contain?
Lipovitellin
What protein does wheat contain?
Gliadin/ gluten
What protein does maize contain?
Zein
Who needs extra protein and why?
Athletes- for repair
Children- growth
Pregnant women- growth of baby
Teenagers- growth spurt>rapid period of growth
What are the effects of excess protein?
- broken down used as secondary source of energy
- diets with more than 30% of the kcals coming from protein can put the kidneys under stress due to ketone toxin build up in the blood
What does PEM stand for?
Protein Energy Malnutrition
What is kwashiorkor
A disease caused by protein deficiency. It causes the stomach to bloat as it has a build up of liquid. It can cause stunted growth, thin arms and legs.
What is marasmus?
When all energy sources have depleted and been used for vital organs. It causes the infant to look emanciated
What is protein complementation?
When 2LBV protein foods are eaten together to make a HBV, ensuring they receive all the essential (indispensable) amino acids.
