Fat and oil Flashcards
What is the difference between fat and oil?
Fat- solid at room temp
Oil- liquid at room temperature
What is are the four uses of fat in the body?
1) insulation
2) fat soluble vitamins and absorption
3) essential fatty acids
4) some energy
What are the fat soluble vitamins?
A, D, E and K
What are essential fatty acids used for?
used for the brain, eyes and neurological development e.g Omega 3
What are some sources of essential fatty acids?
Fish, avocado
What can the body not absorb without fat?
Fat soluble vitamins
What are saturated fats?
Saturated fats are the worst types of fat, mainly found from the animal sources, they can lead to diabetes, weight gain and high cholesterol.
What are the sources of saturated fat?
- animal fat
- lard
- coconut oil
- milk & butter
What are poly-unsaturated fats?
These are the fish fats which are healthier fats which improve cholesterol and reduce the risk of heart failure.
What are the sources of poly-unsaturated fat?
- oily fish (mackerel, salmon)
- sunflower oil
- pine nuts
What are mono-unsaturated fats?
These are the plant based fats which are the better types of fate which improve cholesterol and reduce risk of heart disease
What are the sources of mono-unsaturated fats?
- rapeseed oil
- avocado
- olive oil
What is the structure of saturated fat?
All of the carbon atoms are saturated with hydrogen atoms. No gaps, no double bonds.
What is the structure of mono-unsaturated fat?
Only one double bond between the carbon atoms. Not fully saturated with hydrogen.
What is the structure of poly-unsaturated fat?
More than one double bond between the carbon atoms. Even mess saturated with the hydrogen atoms.
