Protein Flashcards
Why does the body need protein?
Needed for gorwth, repair and maintanence
How much energy does 1 gram of protein provide?
4 calories per gram
What is an essential amino acid?
The 9 essential amino acids are: histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, and valine.
Essential amino acids are acids that cannot be produced by the body
What are HBV proteins?
HBV - High biological value
HBV contains all the essential amino acids
What are LBV proteins?
LBV - Low biological value
LBV proteins contain all the amino acids except 1 or 2. Found in plants e.g peas, lentils and nuts
What happens if you have too much protein in your diet?
Causes you to gain weight over time as it can be stored as fat
What is a protein complementation?
when you combine two vegetable proteins (legumes and grains for an example) to get all 9 amino acids that are essential for your body
What are the alternatives of protein in the diet?
Soya beans, tofu, soya milk, stir fries and cury
What are the protein requirments for Male and Female?
Males require more protein as they are usually taller and have more muscle tissue compared to females.
Females: 42.5g
Males: 45g
what is a protein molecue
a long chain made up of amino acids
what is a denatured protein molecue
when its normal shape gets deformed because some of the hydrogen bonds are broken
(cannot go back to its original shape)
what is a coagulated protein molecue
denatured protein molecues knock into others and start to join together in large groups
what is an over coagulated protein molecue
when protein is over cooked the bonds between the coagulated strands tighten which makes all moisture (water) squeeze out leaving though or dry meat
what is gluten
- developed by kneading, this strengthens and lengthens the gluten strands
- dough becomes strechy and elastic
- a protein
what is a foam formation
