Fermentation
Fermentation can be described as a biological process which converts sugars such as glucose, fructose, and sucrose into cellular energy, producing ethanol and carbon dioxide as a side-effect. The process reduces acidity in wine and also releases some carbon dioxide in the meantime.

White wines typically don’t age as long as red wines because they’re not fermented on their grape skins.Average Five to 15 years. Aging is the process of storing spirits (or wines) in barrels or stenlles steel tanks for a specific period of time
