Temperature Effect on Amylase Activity
As temperature increases, amylase activity generally increases until reaching an optimal temperature, after which the activity rapidly declines due to the enzyme denaturing at high temperatures
pH Effect on Amylase Activity
The optimal pH is 7 and decreasing or increasing of pH can increase or decrease the enzyme activity
