how are plant oils extracted?
The plants are firstly selected and then placed on metal plates to be crushed. Next the weight is added to squash the plates together to extract the oil. They can also be separated by a centrifuge, solvents or distillation
why are vegetable oils used in cooking?
They have a high boiling point, high in energy and has a different flavour
why are oils used in food?
They have high energy, vitamins and essential fatty acids
what bonds do unsaturated oils have
Double bonds
what are the properties of unsaturated oils?
Liquid at room temperature and healthier
how are unsaturated oils hardened?
The are heated at 60’ with hydrogen over a nickel catalyst (hydrogenation)
what problems can saturated fats case?
High cholesterol, blocked arteries and heart disease
