what is an emulsion?
A
A mixture of liquids that cannot naturally bond, so an emulsifier is used to bond them

what is hydrophilic?
A
Hydrophilic is the end of the emulsion that’s attracted to water

Hydrophobic is the end of the emulsifier that is attracted to the oil not the water

what are the positives of emulsions?
A
It gives it a longer shelf life and stops substances from separating whilst still able to be low in fat

what are the negatives of emulsions?
A
The emulsifier can cause people allergic reactions and therefore that food cannot be eaten
