Why are vegetable oils important foods?
Because they provide energy and important nutrients.
Why are some vegetable oils described as unsaturated?
Their molecules have carbon-carbon double bonds.
Why are many foods from fast food outlets cooked in oil?
Because it cooks faster and it changes the flavour, colour and texture.
How can you recognise an emulsion??
They are opaque and thicker than the oil and water they are made from.
What is an emulsifier?
An emulsifier is a substance that stops oil and water separating. It has one hydrophilic and one hydrophobic end.
Give one benefit and one drawback from eating foods that contain vegetable oil?
They are high in energy/contain important nutrients.
High in energy so easy to eat to much.
Why should you be aware of emulsifiers in the food you eat?
Because they taste better, it’s less obvious that they are high in fat.
What are two methods used to extract vegetable oils?
Distillation and pressing.
