Define large and small Wild Game.

A

Large: all wild land mammals living freely in the wild that do not fall within the definition of small wild game: deer, feral wild boar, feral wild goats.

Small: birds and lagomorphs, divided into feathered and small furred.

Red: light brown tail and white inner thighs

Fallow: White under tail

Roe: Small with a white bum

Sika: bambi

Pheasants: red face with collar (male) grey with spots (female)

Red legged Partridges: red beak

Grey partridge: orange-chestnut head, stripped legs

Mallard: green neck

Teal: green head and smaller than mallard

Pintail: brown head, white chest

Woodcock: long beak

Common snipe: woodcock but smaller

What is a trained hunter?

A

EC regulations require one member of a hunting team to have sufficient knowledge and training to undertake an initial on-the-spot exam

AGHEs can only accept large and small game that has been examined by a trained hunter with evidence of certification

A

A
  • Age and sex of the deer
  • State of nutrition of the deer
  • Evidence of bruising or haemorrhage
  • Indications of faecal contamination or decomposition
  • Local or general oedema
  • Efficiency of bleeding
  • Any swelling, deformity or other abnormality of bones, joints, or musculature
  • Any abnormality in consistency or colour
  • Condition of the pleura and peritoneum

What are the three scenarios on how a wild animal can be accepted to AGHE?

A
  1. If a trained person inspects the body and viscera, they must: attach a numbered declaration to the animal’s body, the head and viscera need not accompany the body except in species susceptible to trichinosis (in which case head and diaphragm must come too)
  2. If trained person is not able to complete the declaration: all viscera except stomach and intestines must accompany the body, the trained person must inform the competent authority of the circumstances that prevent the completion of the declaration
  3. If there is no trained person: the head and all the viscera except the stomach and intestines must accompany the body

Inspect unskinned carcasses prior to the start of processing in order to determine

  • Identity
  • Degree of contamination of hid
  • Detect abnormalities not resulting from the hunting process
  • Check that death was not caused by reasons other than hunting
  • Investigate organoleptic abnormalities
