This is a simple dish which takes wild boar and pork butt sausage seasoned with garlic, fennel seed, paprika, and chili flakes. The sausage is sautéed then tossed with the orecchiette pasta, veal stock, marinara, kale, Calabrian chilis and garnished with basil, parsley and Paraden cheese.
Orecchiette is small and round shaped pasta and means “little ear”. Wild boar shoulder and ground pork butt

Individually baked lasagna with five layers of fresh pasta and alternating sauces seasoned with Parmesan cheese.
Bolognese is a slowly cooked meat sauce with tomatoes, aromatic vegetables, ground pork and beef.
Béchamel is a classic creamy white sauce made of milk, flour and nutmeg. This is also a staple in our kids fettuccine.
