Oxidation of food and Esters Flashcards
How do you slow down the rate of oxidation of food
Refrigeration
Packaging under a vacuum or inert gas such as Nitrogen
How do Antioxidants work
They work by removing free-radicals so they protect food. They donate an electron to the free radical and this forms a stable pair of electrons.
Types of antioxidants
Vitamin C, Vitamin E and beta-carotene
What type of reaction are esters formed in?
Condensation reaction
Write the equation for the formation of an ester
Alcohol + Carboxylic Acid = Ester + Water
What is esters functional group?
–COO (ester link)
How are esters made
Go to the diagram in the classroom
Why is a water bath used when making esters instead of a bunsen
This is because both the product and reactant are flammable
