what are proteins
polymers form colloidal systems. too large to dissolve but too small to settle out of soultion (suspension / jelly like)
C, H , O, N, P, S , Fe
monomers= amino acids
+- 20 naturally occurring amino acids (essential for life)
joined by peptide bonds
dipeptides
2 amino acids joined by peptide bond = dipeptide
dipeptides join to form a long polypeptide chain, which join together to form protein molecules.
each portion molecule consists of 50 - 1000 amino acid units.
structure
grouped according to their structure. ( fibrous, globular, conjugated)
proteins coil and bend to form large complex 3d molecules kept in place by weak hydrogen and disulphide bonds
denatured
when proteins are exposed to high temperatures or the wrong pH the weak bonds break causing the protein to unfold. the protein then changes shape and is unable to perform its function. irreversible
biological importance of proteins
main building material / structural framework for cells
respiratory pigments (haemoglobin-blood and myoglobin -muscles)
some act as enzymes, antibodies or protective proteins
serve as energy source after primary source is finished
some are hormones control many bodily processes
