- Trad - long mac, up to 3 yrs barrel age, top whites w/oak, Carb/M for cheap
- Tannin Mgement (4)
- Pick at right time/sort
- Cold Soak - before F. for C extraction (not T)
- T extraction by low temp F.
- P/O monitored to limit T too

- Traditionally, long maceration and up to 3 years barrel aging - only top whites see oak; carbonic for cheaper wines
- Tannin Management via:
- Picking at the right time & sorting
- Cold soaking before fermentation for colour extraction mainly (not tannins)
- Tannin extraction by lower temperature fermentation
- Pumping over is watched to limit tannins too
