Pure expression of excellence in blending; while the vineyard sources are quite ordinary, the results are excellent. Stainless steel and concrete vats only. Double cold-settling of the must (promotes bright, intensely fruity wines). Colder cellars than most in Champagne (retards the second fermentation). All hand-riddled.
Pol Roger: Wines produced
Brut Réserve (equal portions major grapes, NV)
Pure (no dosage)
Rich (demi-sec, with additional aging post-disgorgement)
Vintage: Blanc de blancs, Brut, Rosé

Who owns Clos St. Jacques and Chaudes Terres? What is unique about the vineyards?
Bollinger in Aÿ; used for VVF
The vineyards were never grafted post-phylloxera, and are replanted via provignage. They are also planted to 30,000 vines per hectare (as opposed to the normal 7,000).
Bollinger: House Style
Wines are fermented and aged in oak. Reserve wines are kept in magnums, bottled with sugar to keep 1.5 atmospheres of pressure in the bottle, protecting the freshness of the wine.
What contributes to the argued bottle variation in Grande Année and R.D.?
Natural cork for the secondary fermentation, and disgorgement a la volée.
Bollinger: Wines Produced
Grande Année/Rosé (60% PN, 40% Chard, natural cork, hand-riddled, disgorged à la volée, brut)
R.D. (Grande Année with longer aging on the lees; extra brut)
Vieilles Vignes Françaises (100% PN, all ungrafted)
Why are the grapes for VVF typically harvested superripe?
Harvest dates are mandated by the government. The vineyard ripens a week early because of the severe pruning on the en foule vines.
Which vineyard used to be used for VVF until it lost the battle with phylloxera in 2004?
Croix Rouge, Bouzy
How much land does Bollinger own?
160ha, or 2/3 of production
Where is Bollinger, and when was it established?
Aÿ, 1829
Where is Jacquesson, and when was it established?
Dizy, 1798.
Jacquesson: House Style
Fermented in oak foudre, full ML, tendency towards oxidation. Extra Brut across the board on the single vineyard wines.
Where is Philipponnat, and when was it established?
Mareuil-sur-Aÿ, 1910
