Ahi Tuna Tower

TOWER
Wonton crisps, pico de gallo (tomatoes, onions, jalapeno peppers, cilantro, avocados, mangoes, lime juice), Ahi tuna mix (tuna, soy sauce, chili sauce, white and black sesame seeds, sesame oil and cilantro) served with wonton chips on the side. Plate is drizzled with Thai cream sauce, basil oil and dotted with sriracha Sauce. Cold freestyle platter
Lobster Cocktail

LOB
Lobster meat cocktail on a bad of julienne iceberg lettuce. Served with cocktail sauce, mustard mayonnaise (Dijon mustard, mayonnaise, Worcestershire, horseradish). Garnish is a lemon wedge and watercress. Chilled martini glass, chilled 9” round plate, cocktail fork, 2 stainless still bullets.
Fresh Jumbo Lump Crab Meat Cocktail

CRAB
Jumbo lump crab meat on a bad of julienne iceberg lettuce. Served with mustard mayonnaise. Garnish is a lemon wedge and watercress. Garnish is a lemon wedge and watercress. Chilled martini glass, chilled 9” round plate, cocktail fork, and a stainless still bullet.
Broiled Sea Scallops

SCAL
Three Sea Scallops wrapped in bacon served on a bed of spinach.Garnish is a charred lemon half and Apricot Chutney (apricot preserves, cracked black pepper and horseradish). Hot rectangular plate.
Tuna Tacos

TUNA TACO
APP Tuna taco mix (tuna, green onions, ginger, garlic, crushed red pepper, kosher salt, soy sauce and sesame oil) served in 3 wonton taco shells over a bad of Wakame seaweed and sprinkled with sesame seeds.
Garnish is matchstick cucumbers, avocado slices, pico de gallo and Thai cream sauce. Room temprature rectangular plate, stainless still bullet, wire taco stand.
Jumbo Shrimp Cocktail

SHR
Five large size shrimp served in cocktail sauce. Garnish is seaweed, a lemon wedge and smoking dry ice. Metro square plate, chilled glass bowl with insert, stainless steel ring, cocktail fork and 6” doily.
Oysters on the Half Shell

OYS
Wianno Oysters shucked fresh per order. Served with strained horseradish, cocktail sauce and Tabasco. Garnish is a lemon wedge and watercress. Drake bowl, doily, stainless steel bullets, cocktail fork. Wianno (pronounced we-a’-no) is on the southern Cape Cod, Massachusetts coast. Wiannos are grown in racks and bags just off the bottom and are exposed at low tide. Also 3”, the oyster shells are brown on top, green and white on the bottom. The white, slightly pink meat is slightly sweet and profoundly salty.
Crab Cake Appetizer

1/2 CAKE
Jumbo Lump Crab-meat mix (breadcrumbs, mustard mayonnaise sauce, Worcestershire sauce and Tabasco) Served with mustard mayonnaise sauce. Plate drizzled with Thai cream sauce. Garnish is a charred lemon half and watercress. Hot 12” round plate.
Shrimp Alexander Appetizer

1/2 ALEX
Four large sized shrimp coated with seasoned breadcrumbs. Plate drizzled with Beurre Blanc Sauce (white wine butter sauce with hint of lemon and shallots) and basil oil. Garnish is a charred lemon half and watercress. Hot rectangular plate.
Oysters Rockefeller

ROCK
Four oysterss topped with creamed spinach and Hollandaise Sauce (rich, creamy colored sauce). Served on a bed of rock salt sprinkled with crushed red pepper. Garnish is a charred lemon half and watercress. Hot rectangular plate.
Prosciutto Wrapped Mozzarella

PROS MOZZ
fresh mozzarella cheese, tomato and basil wrapped with thinly sliced prosciutto ham, sautéed and served over a bed of watercress and red onions, drizzled with balsamic glaze and topped with shaved parmesan, ROOM TEMP LARGE ROUND PLATE
Baked Escargot

ESCARGOT
6 escargot baked in garlic burgundy butter and topped with puff pastry circles.
Garnish is a lemon wedge.
Hot 9” round plate, cast iron skillet, 6” doily, cocktail fork.
Chilled Seafood Platter for One

COLD APP (1)
Lobster cocktail meat served in a rounded romaine lettuce leaf, King crab lag, shrimp cocktail, jubo lump crab meat served in a rounded romaine lettuce leaf, 2 oysters on the half shell.
Served with tabasco, strained horseradish, cocktail sauce and mustard mayonaise sauce. Garnish is 2 lemon wedgeds and 2 springs if watercress. Cold soup bowl filled with ice, 3 stainless steel bullets, doilu lined B&B plate, and cocktail fork.
This appetiuzer can serve up to 8 people. The items are the same, the amounts increase depending on the amount of people. Refer to your trainer and the picture binder to see the plate presentation for more than one and up to 8 people.
Baked Seafood Platter for One

Shrimp Alexander, mini crab cake, oysters rockefeller, bacon wrapped scallop.
Served with mustard mayonnaise sauce and apricot chutney each on a spinach leaf.
Garnish is a charred lemon half and watercress. Hot Rectangular plate.

Short Rib Steak Tacos
