What is the definition of Meat?
Flesh from animals. Usually relates to non birds
What is the definition of Offal?
The edible internal organs of animals or birds
What is the definition of Game?
Meat sourced from wild animals, usually rabbit, but can include birds such as pheasant or partridge
What is Poultry?
Domestic Fowl (birds) reared for their meats
Where does beef come from?
Cows at least 12 months old. Longer the meat has been hung after slaughter the more flavoursome
What should you look for when buying Beef?
Look for dry, not slimy meat with light marbling with cream fat
What is Vale?
Baby cow
Why didn’t people used to not eat veal?
due to welfare issues but they have not been improved.
What’s a good thing about Veal?
softer and more delicate in flavour
What are the 3 types of sheep and how old are they?
Lamb - sheep under 1 year old
Hogget - Lamb older than 1 year old
Mutton - older sheep
Where does pork come from?
Pigs that are 7-12 months of age
What are some Pork products?
Lard

What is the process of Ham?
Comes from Pork Leg
cured and usually smoked
What is the process of Bacon?
cured with salt/brine and smoked or left plain for unsmoked
What is the process of Gammon?
Cured whole leg and cut into slices or eaten hot as gammon steaks
What is a benefit of eating horse?
It’s a healthy meat chicest low fat content and more omega 3 than beef. It tastes similar to been but slightly sweeter

Sometimes called kid
80% of the world eat goat
Eaten widely to black communities - goat curry is popular

it is red die to myoglobin
What is collagen?
Collagen is a protein it is flexible and white and becomes gelatine when boiled
What is Elastin?
Elastin is yellow and not weakened by heat so never breaks down
Why is meat cooked?
Kills bacteria
Improve texture, colour, appearance, flavour
What temperature does meat coagulation happen?
60°
what does denaturation mean?
protein change in structure and composition as the muscle fibre become firmer
What temperature does meat change colour at?
65°
why does meat change colour when cooked?
The protein in the meat meat reacts with the sugar in the meat which causes it to brown
What leaks out of the muscle fibres when the meat is being cooked?
water soluble vitamins and slats that gives meat it’s flavour
What does RSPCA assured mean?
RSPCA assured mean is the ethical food label dedicated to farm animals welfare.
What does the red tractor mean?
The red tractor mean the food is safe to eat, and has been produced responsibly from farm to fork.
