When buying fish what should we check for?
The scales are still slimy Eyes should be clear Gills should be bright red when you press down on it it should pop back up It shouldn't have a bad odour Buy from a reputable buyer check it's still frozen
What are four ways we could buy fish?
Fresh from a supermarket or fishmonger
Frozen from the freezer of a supermarket
Canned
Smoked fish
How should fresh or smoked fish be stored?
Kept at a temperature between 0°-5°. Well wrapped to prevent smell contaminating over fish
How should frozen fish be stored?
Kept frozen below 18° and defrost in fridge
How many fillets do Round Fish have?
2 Fillets

Flat fish have 4 Fillets
How should we cook fish and what happens?
Fresh fish cooks very quickly and if it’s overcooked the fish will become tough and dry.
During cooking the fish muscles shrinks and moisture is squeezed out.
The connective tissue in fish is called collagen and this changes into gelatine when cooking.
What are some of the ways we can cook fish?
Grilling - add a little bit of oil onto fish first. Oily fish does not need extra fish.
Shallow Frying - Dry on kitchen towel before cooking
Deep Frying - Usually for battered fish
Steaming - Used in oriental dishes often
What is the difference between a meat and fish muscle?
Fish muscles have far less connective tissue
What’s fish muscle made up of?
Short fibres spirited by very thin connective tissue
What vitamins do fish have?
Vitamin A and D
