what are lipids

A

Large group of molecules that are generally non-polar or have a large hydrophobic portion
They aren’t technically macromolecules, but are sufficiently large enough that we group them in with the rest of them
They typically have roles of energy and self structure within organisms
They are also pre cursors to steroid and vitamins

basic properties/characteristics of lipids

A
  • Non polar or have a substantial non polar segment
  • Held together by weak but additive dispersion force
  • Dissolve readily in organic solvents- other non polar substances
  • Composed of mainly C, H and O
  • Differ from carbohydrates dye to smaller proportion of oxygen
  • May contain other elements such as phosphorous and nitrogen

saturated/unaturated

A

Saturated: single bonds. Bend easily. Tend to be solids
Unsaturated: double bonds. Stiff and cause it to kink. Tend to be oils

how they are made

A

The synthesis of three ester linkages releases water and thus is a condensation reaction, forming an ester bond/linkage.

One glycerol molecule will react with three fatty acid molecules and produce three water molecules
