How is choux pastry made?

A

Boiling water, adding the fat, stirring in the flour
> Heat gelatinises the starch in flour, which swells up, absorbing water to form a type of sauce known as a roux, which should leave the sides of the pan when cooked
Once cooked, eggs are beaten and added bit by bit to form a paste
