A
hydrolyses proteins to polypeptides and amino acids which stimulate acid production

- active in first hour of digestion (10-15%)
- inactivated by a pH above 5
- a large meal can prevent some gastric acid secretion

- salivary amylase will act on starch if pH is around 6
