Vin Jaune is made exclusively from the Savagnin grape, known locally as Nature. It is aged for a minimum of 6 years in oak not topped up and develops a flor yeast, the same yeast that lends the distinctive acetyldehyde to Sherry. Vin Jaune is not fortified and is bottled in a unique 62 cl Clavelin Bottle. Chateau Chalon AOP specializes in its production.
