Describe the Arbois AOC.
Dry white, rose, red, Vin de Paille, Vin Jaune
White grapes: Chardonnay, Savagnin

Production is dominated by red wine

Arbois AOC is the largest AOC in Jura in terms of size and volume

A restructuring of vineyard slopes to consolidate vineyards into workable plots with access roads

What is Vin Jaune?
A wine made under a protective layer of surface yeast.
This is long-aged and long-lived oxidative wine usually made from Savagnin grapes.
The name means “yellow wine”.
What does the word “Ouille” signify on a bottle of Jura wine?
The wine was made reductively, with minimum oxygen exposure
This is in contrast to “Sous Voile”, which is the Sherry-like production method used for Vin Jaune
This term most often appears for Savagnin wines
Ouille Savignin wines in Arbois AOC are often labelled “Nature”
What does the term “Sous Voile” mean on a bottle of Jura wine?
The wine was made with controlled exposure to oxygen, under a surface layer of yeast
These are wines that were being made into Vin Jaune, but were removed from the barrel early
Some Chardonnay is also made in this fashion
These wines are usually labelled “Tradition”
What does the term “Tradition” mean on a bottle of Jura wine?
A wine, usually Savagnin-based, made under a surface layer of yeast

What is the primary by-product of sous voile aging?
Aldehydes, which contribute the flavors of walnuts, hazelnuts, and spice
