Passito method
It increases structure and flavor concentration. The grapes are picked early (high acidity) and dried indoors, concentrating sugars and flavors. Two wines produced by passito method are Amarone della Valpolicella and Recioto della Valpolicella.
Ripasso method
It uses grape skins from a fermenting Amarone della Valpolicella. Before fermentation finishes the Amarone is drained off the skins. The skins remain unpressed and are added to a vat of Valpolicella that has finished its fermentation. Yeast ferment the remaining sugar on the Amarone grape skins. A wine produced by ripasso method is Valpolicella Ripasso.
