Allergy
When a person has an allergic reaction to a food item. The reaction can sometimes be life-threatening
Breakeven
When enough revenue has been made to cover the costs involved. A business that has reached break-even point has made zero profit but also zero loss
Anaphylactic shock
A life-threatening reaction to an allergy
Brewery
A place where beer is made on a commercial scale so that it can be sold to pubs, bars and restaurants
Accessibility
The extent to which a customer or user can obtain a product or service at the time it is needed
Ambient
Relates to the immediate surroundings.
Ambient temperature is the temperature in a room or surrounding an object
Barista
Someone who serves in a coffee bar
Wholesalers
These businesses buy goods in bulk directly from farmers/growers and manufacturers, and then sell them on in small quantities to retailers
FIFO
‘First in, first off’
Guest cycle
The four stages of a guest’s interaction with a hospitality business, including before arrival, on arrival, during their stay and on departure
Demographics
Studies of a population based on factors such as age, race, sex, economic status, level of education, income level and employment
Carbon footprint
The amount of carbon dioxide generated by an action, e.g producing or transporting food. By choosing to use local products, which have not been transported hundreds of miles by roar or air, you are helping to reduce their carbon footprint
Credit
The money that is owed to the supplier for items/goods that have already been delivered

Competitive intelligence
The action of defining, gathering, analysing and distributing intelligence about products, customers and competitors
High-risk food
Include pre-prepared food items that can be eaten without further cooking, and which may easily become infected with bacteria
Economic boom
An increase in the level of economic activity, and of the goods and services available in the market place
Float
The amount of money in the cash till at the start of the day or the shift. This can be used to give customers change

A set of laws
Seminar
A meeting where people can get together to discuss business or to receive training
Regulation
A rule made by an authority
Turnover
The amount of money taken by a business in a specific period
Purchasing cycle
A system used to place, receive and pay for goods ordered from an outside supplier
Unlimited liability
The owner of the business has a legal obligation to pay any debts/loses made by the business, even if this means selling their own possessions to do so
Compliance
Acting in a way that follows a set of rules, policies or standards
Credit
The money that is owed to the supplier for items/goods that have already been delivered
Ethics
The moral principles that should underpin decision making. Businesses can provide moral and ethical guidelines for how their business affairs are conducted
Market intelligence
Primarily external data collected and analysed by a business about markets that it anticipates participating in (used to make decisions)
Market share
The amount of trade a company has in comparison to the entire trade that is available to trade in
Free range
A term used to describe the type of farming where animals can roam freely rather than being caged or enclosed
Disposable income
The money left over from someone’s wages after they have paid their taxes and basic living costs
