Our manchengo cheese is a semi-firm sheep’s milk cheese from La Mancha in Spain. It has a slightly sweet and nutty flavor made a little sharp from 6 months of aging.

Mahon is a cow’s milk cheese from Minorca. It has been aged for 4 months and has a similar flavor to Cheddar. The cheese is pale yellow with small holes.

The spinach chickpea cazuela is a served in a traditional brown earthenware dish from Sevilla in southern spain known as a cazuela. It’s moorish inspired from southern spain with the addition of whole and mashed chickpea, cumin, lemon juice and zest.
