About Chateau-Chalon AOC?

A

This is a Vin Jaune bottled in 62cl square bottle caled clavelin
Its made by leaving white wine made from Savagnin ( Traminer ) in sealed wooden casks that are never toped up for up to 6 years .
Flor settles on the wine like in the sherry production, so produceing Vin Jaune and is similar to a old sherry except its not fortified.

A

This wine was originaly made from grapes that had been laid out on beds of straw to dry before fermentation.
Today they put on wire netting or wicker trays ( Switzerland is also known for its Vin de Paille and a very small amount in Hermitage )
