Carbonic Maceration
Whole bunches of uncrushed grapes are put into vats filled with carbonic dioxide, fermentation then ensues when the grapes on the bottom are smashed by the top grapes. As more carbon dioxide us produced fermentation is then continued within the grapes, then the berries burst, releasing juice. More fruit forward flavor, less tannins, and less malic acid.
