What is fortified wine?
Base wines to white high-proof grape brandy is added to increase alcohol to 15-22%
What is the purpose of fortifying wine?
Adds body and increases the wine’s ability to age
What does “fortified before fermentation” mean?
No alcohol is created from the fermentation of the base wine
What does “fortified during fermentation” mean?
Adding alcohol during fermentation stops the action of yeast, retaining residual sugar in the wine
What does “fortified after fermentation” mean?
Boosts alcohol levels; most often a dry wine
